Using an ancient recipe from Marche, Filotea pasta is made from the freshest eggs and finest flour (including durum wheat semolina). Spaghetti Chitarra – the name evokes guitar strings. These long pasta strands are a square spaghetti and named for the stretched wire used to cut guitar strings.
